Meet the Chef
Executive Chef Murray Hall believes a great meal is the perfect blend of fresh, wholesome ingredients, superb quality, and craftsmanship. Chef Murray works closely with his culinary team to bring the finest ingredients from across Canada to our kitchen. Known for his healthy alternatives, he turns comfort food classics into healthier, low-fat versions that will surprise and delight you.
Chef Murray has proven his culinary prowess, as a five-time winner of the prestigious IACC Canadian Copper Skillet Competition.
Executive Chef Murray Hall has crafted his own unique menus using locally sourced ingredients, and taking inspiration from the seasons. Like any great Chef, Murray has his signature dishes like the IFL’s famous Bread Pudding. It is his passion and continuing love of food that ensures each new dish is a delicious addition to the menu.

Does the IFL provide catering services?
Yes, we provide on-site catering services. Whether you are planning a banquet for 300 people or a coffee break for 20, we are happy to design a menu to suit your meeting purpose, theme, and personal taste. Your IFL Conference Planner will work with you to customize a menu to suit your event needs.
Do you meet special dietary requests or vegetarian cuisine/options?
We offer a wide selection of appetizing and satisfying dining options that meet most dietary needs. However, should you not be able to find what you’re looking for, speak with one of our Associates in the Dining room wearing a red tie – they are available to help with special dietary requests.
What are the Dining Room hours of operation?
- Breakfast 6:30 a.m. to 8:30 a.m.
- Lunch 11:30 a.m. to 2:00 p.m.
- Dinner 6:00 p.m. to 8:00 p.m.
